Late summer and early fall on the homestead always bring an abundance of garden fresh zucchini. While I love preserving, pickling, and dehydrating, there is nothing quite like pulling a warm, spice-scented loaf of homemade quick bread straight out of the oven.
This recipe is my updated, nutrient-dense spin on a classic family favorite. By swapping in half whole wheat flour, cutting the refined sugar in half, replacing part of the oil with unsweetened applesauce, and using ground flaxseed alongside garden zucchini and juicy chopped pineapple, you get a tender, bakery-style crumb loaded with chocolate chips in every slice.
Whether you're baking a single batch for the family or doubling it up for the freezer, this easy, forgiving loaf is a cozy addition to any morning coffee or afternoon tea.
Lower Sugar & Wholesome Fats: Cuts white sugar in half by pairing 3/4 cup granulated sugar with 1/4 cup caramel-toned coconut sugar. We replace half the oil with unsweetened applesauce and use a 50/50 mix of rich butter and neutral avocado oil.
Balanced Flour Blend: Combines 1½ cups whole wheat flour for hearty fiber with 1½ cups white bread flour to hold up rich mix-ins like chocolate chips, chopped nuts, and pineapple without sinking.
Double Fruit Hydration: Uses coarsely shredded garden zucchini alongside drained, chopped pineapple slices to guarantee a moist loaf every single time.
Prep Time: 20 minutes
Bake Time: 50–60 minutes
Yield: 2 Loaves (-inch pans) — Simply double all quantities for 4 loaves!
Oven Temp: 350°F (175°C)
1½ cups whole wheat flour
1½ cups white bread flour
1 tbsp ground flaxseed meal
2 tsp baking soda
1/2 tsp baking powder
1 tsp fine sea salt
1½ tsp ground cinnamon
1 cup semi-sweet or dark chocolate chips
2 large eggs (room temperature)
1/4 cup melted butter (cooled slightly to lukewarm)
1/4 cup avocado oil (or light olive oil)
1/2 cup unsweetened applesauce
3/4 cup granulated white sugar
1/4 cup coconut sugar
2 tsp pure vanilla extract
6 tbsp water, milk, or reserved pineapple juice (hydrates flax and whole wheat flour)
2 cups coarsely shredded zucchini (lightly blotted, not squeezed dry)
1 cup pineapple slices (drained and coarsely chopped)
3/4 cup chopped walnuts or pecans (optional)
Preheat your oven to 350°F (175°C). Thoroughly grease two -inch loaf pans with butter or nonstick baking spray. (If doubling the recipe, grease 4 loaf pans).
In a large mixing bowl, whisk together the whole wheat flour, white bread flour, ground flaxseed meal, baking soda, baking powder, salt, ground cinnamon, and chocolate chips. Tossing the chocolate chips directly into the dry flour coats them, keeping them evenly suspended in the loaf rather than sinking to the bottom.
In a separate bowl, whisk together the eggs, cooled melted butter, avocado oil, unsweetened applesauce, white sugar, coconut sugar, vanilla extract, and liquid (water/milk or fruit juice). Stir in the shredded zucchini until evenly coated in the liquid mixture.
Pour the wet zucchini mixture into the dry flour and chocolate chip bowl. Using a rubber spatula, fold gently just until the flour disappears—do not overmix, as bread flour and whole wheat flour can get dense if overworked. Fold in the chopped pineapple and optional chopped nuts. Let the batter sit in the bowl for 3 to 5 minutes so the dry ground flaxseed and flours absorb the liquid.
Divide the batter evenly between your prepared -inch loaf pans. Bake at 350°F for 50 to 60 minutes. Start checking around the 50-minute mark by inserting a wooden toothpick into the center of a loaf—it should come out clean or with a few moist crumbs (avoiding melted chocolate pockets).
Allow the loaves to cool in their pans for 10 to 15 minutes, then turn them out onto a wire cooling rack to cool completely before slicing. Slice thick, slather with warm butter, and enjoy!
Doubling the Batch: If baking 4 loaves at once, stagger the pans on your upper and lower oven racks so air circulates freely. Rotate the pans halfway through baking for an even rise and crust color.
Storage & Freezing: Wrap fully cooled loaves tightly in parchment paper and foil. Store at room temperature for up to 3 days, or freeze whole or sliced loaves for up to 3 months.
