This Cottage Cheese Pizza Bowl is an easy dish to put together and a great way to use up some left overs. Enjoy this High protein and low carb meal and your friends and family won't know how healthy it is for them! It will satisfy your cravings for pizza or lasagna with it's ingredients but without the added calories from bread or pasta.

You can make it with meat or vegetarian or both! Shared some of the vegetarian one with my Neighbor and she loved it!

Yield: 2 Small/Medium Casserole Dishes

Ingredients:

1 1/2 C Cottage Cheese

1/2 C Salsa or Red Sauce, divided

2 Cloves garlic, chopped

1/2 C cooked broccoli, chopped, divided

1/2 C cooked cauliflower, chopped, divided

1/2 C Mixed Veggies

1/3 C Onions, Chopped

1/2 C chopped mushrooms, divided

1/3 C Garbanzo beans, divided

1/4 C black olives, chopped, divided

1/4 C bell pepper, chopped, divided

1/3 C Parmesan Cheese (I used 

1/3 C Mozzarella cheese, shredded or cubed (I used Dutch Country Brand Cheese)

Italian Seasoning, Salt, Pepper to taste

Instructions:

1) Combine Cottage Cheese, Parmesan, half the red sauce, and half the veggies, and Seasonings.

2) Scoop mixture into an oven safe dish. Top with rest of veggies, cheese, and Seasoning.

3)Bake 350-400 degrees for 18 to 25 minutes or until heated through and Cheese is melted and starting to turn golden.

4) Serve with Avocado Slices, Marinaded Mushrooms and Olives, Pita Chips, or Fresh Veggies. Enjoy!
