Marinaded Mushrooms, Olives, Veggies, Cheese and Meat - Antipasto

What an Awesome way to say Italiano or Antipasto Board in a bowl! All your favorites in one dish so you can have bursts of savory flavor in every tasty bite! Fast and Easy to put together and will satisfy your Antipasto craving!

Yield: 1 Medium Sized Bowl

Marinated Mushrooms, Olives and Veggies Antipasto

You're definitely not limited to what is listed in my recipe. This is what I used that I had on hand or purchased for the recipe. Use what you have, what you can buy or what is in season! You can choose to leave the meat out, and you can even put in dried fruit! A variety of cheeses would be delicious and some more pickled veggies would be devine! Garnish with your favorite fresh or dried Herbs for a Beautiful Presentation!

Ingredients:

1/4 C Olive Oil

1/4 C Red Wine Vinegar

2 Cloves Garlic, chopped

Fresh Herbs, Italian Seasonings, Salt, Pepper to Taste

Juice of One Lime

1 Can Garbanzo Beans, drained, rinsed

1 Can Black Olives, drained

1 Cup Green Olives or Mixed Olives

1 12 oz jar of Pepperocini

1/2 C Bell Pepper, diced

1/2 C Sweet Onion, diced

1/2 C Artichoke Hearts, chopped

8 oz block Mozzarella Cheese, cubed (I used Dutch Country Brand)

1/3 Cup Feta Cheese

2 C Mushrooms, Chopped in half

1 C Genoa Salami, Chopped into small pieces

Instructions:

  • Make the vinaigrette. In the bowl add the olive oil, vinegar, spices. Combine.
  • Add the Rest of the Ingredients and mix well. Stir until everything is coated well.
  • Marinate in fridge for 3 hours or overnight. Stir again before serving.
  • Pares well as a topping or side dish with your favorite Mediterranean or Italian Dish. Try it with a Cottage Cheese Pizza Bowl or A Keto Wrap. Enjoy!
