What to do with leftover Salad and Food - It's a Wrap!

So you made a super large salad for the week to work on and you are a little tired of it and afraid it will go south before you can get it all down. Well, just change it up a little and cook your veggies, and add some variety to your meal. 

If you're like me, you can be a sucker for buying in bulk, and what to do with all that food? Especially if it's produce and you have to do something with it! Don't fear! You can use it up! I went to Whole Foods and got some nice organic lemons, limes, celery, bell peppers. Then later Sam's some more Bell peppers, cukes, organic carrots, broccoli, cauliflower, red and sweet onions. Kroger and Walmart had a good deal on Avocados. We have Kale and nice greenery still growing in the Early spring garden. I got lots of meat, flour and corn tortillas from the Co-op. I have a lot of Venison burger in the freezer. Sweet Potatoes, Spaghetti Squash, Pumpkin from last season I cooked and froze in the freezer. Left over Tomatoes from the Youth Bible School. God has provided abundantly! 

 

I set to work at Chopping those tomatoes, onions, bell peppers, garlic, some carrots and celery and seasonings. We thankfully used up all the fermented Salsa from last year before any of it went bad and made 2 quarts worth of Fermented Salsa from that.

We also used up our refrigerator pickles from last year and made some more (1 1/2 gallon worth) with the cucumbers, onions, garlic and seasonings.

I cooked the broccoli and cauliflower that was not going to be used in my salad for the week and put those in the freezer for later use.

It felt so good to get them out of the fridge and in a safe place to be used later or for an extended period of time!

So, about this leftover salad-I cooked up the rest, and put it in my wrap of choice, and presto! Delicious! Add some cheese and meat along with it and some avocado and topping on the side and it's a wonderful meal!

 

About that Cheese! This whole Recipe series was spurred on by my friend at church that has cheese from a wonderful Company Called Summer Hill and Dutch Country Cheese.

The Parmesan has been aged for 10 months. That's a good thing!

This is made from Real milk and has Cheese Cultures in it! That's a good thing!

Take it from me, if you think outside of the box, you can make your food stretch and bless others as well as have plenty of food for your family. So thankful to God for His providence!
