Keto Pizza Recipe
1/3 to 1/2 coconut flour
1/2 tsp salt
1 T Dry Italian Seasonings
2 L Eggs
2 oz cream cheese
12 oz mozzarella cheese grated or cut into little pieces
Sauce, Cheese, and pizza toppings of choice
1) Preheat oven to 400 degrees. Line 13 inch round pizza pan withparchment paper or 8 by 18 cake pan.
2) In an oven proof bowl put the mozzarella and cream cheese in bowl. Put in toaster oven or oven to melt cheese. This will take maybe 15 min. total. I put it on lower temp like 300, check within 8 to 10 minutes stir and then again stir so it is melted. Add coconut flour, salt, seasonings, eggs that have been slightly scrambled with fork and mix together until fully combined.
3) Knead the dough for around 30 seconds or so to incorporate.
4) Place ball onto parchment paper lined pan and top with another layer of parchment paper. Roll out dough in circular shape.
5) If you want a stuffed cheese crust, just make the pizza size a little bigger than normal and lay some cheese in and cover it with dough by rolling. Bake the pizza crust in pan for 8 to 10 minutes at 400.
6) Take out when done, allow to cool for 5 minutes or so to let the cheese set up a little.
7) Add sauce, then cheese, then desired toppings. Place pizza back in oven for 10 to 15 minutes or until cheese is melted and the toppings are heated through. For my recipe I erred on longer times b/c I put a lot of toppings on mine and it would take longer to bake.

Dutch Country Cheese, Parmesan and Mozzarella-chopped and cubed
Veggies: Onion, Garlic, Bell Peppers, Black Olives, chopped mushroom
Meat: Genoa Salami from our Naturally a Deal Co-op, Venison Bologna from our friends from church, Cooked Venison Burger-seasoned with Spices and garlic, onion
Cream cheese is optional, but I used it for added creaminess and calories as I’m trying to gain weight.
Recipes online generally used microwave to melt cheese, but I opted for the oven as you’re not in such a rush and I don’t like using microwaves.
After baking pizza make sure to allow to cool some before cutting or eating.
Keeps in fridge for several days, May be frozen for later use.
It’s a rather forgiving recipe. Some online recipes use xanthan gum, but I didn’t use that for this recipe.
Substitution for Coconut flour: Almond flour could be used, but Coconut flour absorbs moisture more, so less is used. You would use 1 to 1 1/4 cup of Almond Flour instead of 1/3 to 1/2 Coconut flour. I’d like to experiment with other flours, but have not done so yet.
