This dish can be eaten any time of the day and is Good for you too! A very versatile recipe with flexible ingredients which can be swapped out for what you have on hand and used in other recipes as well! I even used some of the "lentil batter" as a thickener for soup or use it to top on my leftovers for extra protein. I just love it and hope you do too! Savory Keto Pancakes Recipe
1 C Dried Lentils (I used Organic Red Lentils)
2 C Water
Spices of Choice
1 Med. Onion, chopped
1 C Various Bell Peppers
1 C Mushrooms
2 Cloves Garlic, chopped
1 1/2 C Cheese of Choice - I used Dutch Country Mozzarella Cheese, chopped
2 C Cream Topping:
Mixture of Plain Yogurt, Cream Cheese, Sour Cream and Chopped Truffle Cheese, Everything Bagel Seasoning
1 1/2 C Guacamole:
1 Avocado, 1/2 C Lime juice, Cumin, Herbal Seasoned Salt, Pepper, Taco Sauce
1/2 C Black Olives, sliced
1/2 C Chopped Cilantro
Directions:
Soak your 1 C Lentils into 2 C water. Let sit for 4 hours or overnight.
Blend Lentils & Water in blender until smooth and makes a batter.
Add some Seasonings, onions and garlic with butter into pan. Add lentil batter and cook and flip from side to side.
Once pancakes are made, add cheese and bake 300 degrees for 5 min. or so until cheese is melted.
Prepare your toppings.
Layer up your pancakes and enjoy!
Yield: Approx. 6 Pancakes
